It’s no secret among my friends and family that I love champagne. Something about the flutes and the bubbles just make me happy. So champagne cocktails feel extra celebratory, and I’m always on board.
The French 75 is about as classic a champagne cocktail you could think of, and its simplicity makes it a great cocktail to play around with. A great wintertime remix? This beautiful Rosemary Pomegranate French 75.
The classic combines gin, lemon juice, sugar, and champagne. For this Rosemary Pomegranate French 75, you simply swap the sugar with a quick rosemary and pomegranate simple syrup. The red from the pomegranate juice makes this cocktail wonderfully festive.
Flavored simple syrup is a great way to customize any classic cocktails that call for regular simple syrup, like the herb infused simple syrup in this Garden Herb Gin Gimlet. It adds just a little extra something to the end result.
When I make cocktails at home, I’m usually serving them for party and I want to be able to mix things up beforehand instead of making each drink one by one. The great thing about this Rosemary Pomegranate French 75 is that you can do exactly that.
You can make the simple syrup in advance (even days in advance if you want!) and combine the simple syrup, gin, and lemon juice before guests arrive. All people need to do is pour themselves some of the gin mixture and top with champagne. That’s my kind of entertaining.
Rosemary Pomegranate French 75
Here’s what you’ll need:
For the Pomegranate Simple Syrup
- ¼ cup fresh pomegranate juice
- ¼ cup water
- ½ cup sugar
- 3-4 sprigs fresh rosemary
For the French 75
- 1 bottle dry sparkling wine (champagne, cava, prosecco, etc.)
- 4 oz fresh lemon juice
- 4 oz pomegranate simple syrup
- 8 oz gin
- Fresh pomegranate seeds to garnish
How to Make Rosemary & Pomegranate French 75
Start by making the pomegranate simple syrup. Combine pomegranate juice, water, sugar, and rosemary sprigs in a small saucepan over medium high heat. Stir to dissolve the sugar. Bring to a boil, then immediately remove from heat. Allow the rosemary to steep in the warm simple syrup for around 15 minutes.
Let the pomegranate simple syrup cool. If you’re making the syrup in advance, then cover and refrigerate until you’re ready to make the cocktails.
Next, squeeze 4 oz of fresh lemon juice.
Finally, it’s time to mix the cocktail. Each glass should have 1 oz of gin, 1/2 oz of lemon juice, 1/2 oz pomegranate simple syrup and 3-4 oz of champagne.
You can either combine the gin, lemon juice, and simple syrup all in advance and allow people to top their own glasses with champagne, or you can make each glass individually.
I like to garnish the pomegranate French 75 with a few pomegranate seeds and a lemon twist. Allow guests to add extra champagne or additional simple syrup as desired.
