Add the chicken carcass, vegetables, herbs, and spices to a large stock pot and cover with cold water
Bring the pot to a boil, then reduce heat to low and simmer for 6 hours
Strain the bones, vegetables, and debris from the stock using a fine mesh strainer
Strain into storage containers and keep in the fridge for 3-4 days or in the freezer for 3-4 months
This recipe makes around 2 and 1/2 quarts of stock
